Dairy product processing technology

Dairy products are foods made mainly from cow's milk or goat's milk and their processed products, with or without the addition of auxiliary materials such as vitamins. They are also known as cream products. It mainly includes seven categories: liquid milk, milk powder, condensed milk, milk fat, cheese, and milk ice cream. Among them, the milk fat category covers products such as cream and light cream.

Specification

 1.Pasteurized milk Processing

After the raw milk is inspected and accepted, it is first subjected to milk purification treatment and then refrigerated to maintain its freshness. The next step is the standardization process to ensure that the quality and taste of the milk meet the requirements. The homogenization process reduces the size of milk fat globules, thereby enhancing their stability. Subsequently, the milk is disinfected through pasteurization to kill the harmful microorganisms within it. The sterilized milk needs to be cooled to an appropriate temperature before being filled. 

2.Yogurt Processing

Coagulated yogurt: After the raw milk is inspected and accepted, it also needs to go through steps such as milk purification, refrigeration, standardization, and homogenization. Subsequently, sterilization and cooling are carried out. Then, the fermentation strains are introduced for a long time of fermentation. After the fermentation is completed, it is cooled again and then refrigerated.

Stirred yogurt: Its production process is similar to that of the set type, but auxiliary materials are added before filling. Other steps such as the acceptance of raw milk, milk purification, refrigeration, standardization, homogenization, sterilization, cooling, introduction of fermentation strains and fermentation, etc. are all kept consistent. Finally, the same cooling, filling and refrigeration processes are carried out.

3. Powder Milk Processing

1.The production of full-fat milk powder, skimmed milk powder and full-fat sweetened milk powder

The production process of full-fat (full-fat with sugar) milk powder is as follows: After the raw milk is inspected and accepted, it undergoes milk purification, refrigeration, standardization (for full-fat with sugar milk powder), then refrigeration, sterilization and concentration, followed by spray drying, finally sieving and drying the powder or treating it through a fluidized bed, and finally packaging.

The production of skimmed milk powder is slightly different: after the raw milk is inspected and purified, it undergoes standardized (fat separation) treatment, then is refrigerated, sterilized and concentrated. It also undergoes spray drying, powder screening and drying or fluidized bed treatment, and is finally packaged.

2. The production of flavored milk powder

The production process of flavored milk powder is as follows: After the raw milk undergoes acceptance, milk purification, sterilization and refrigeration treatment, it will undergo standardized operations, including the addition of auxiliary materials such as nutritional fortifiers. Then homogenization treatment is carried out, followed by refrigeration, sterilization and concentration, and finally spray drying. Finally, through powder sieving and drying or fluidized bed treatment, the final packaging is carried out.
